Supercooling
In thermodynamics we call supercooling the cooling of a substance below the temperature at which a change of state would ordinarily take place.
Once the solution become supersaturated. crystallization may occur. This means that the solution has to contain more solute entities ( nuclei ) dissolved than it would contain under the equilibrium (saturated solution).
The activation free energy of crystallisation is lowest for α form, higher for β ' and the highest for β form.
