Selectivity of crystallization

Selectivity of crystallization depends on the process, equipment (crystallizers) and parameters used. If we compare olein A and B resulting from the same refined, bleached and deodorized (RBD) palm oil but fractionated on two different plants, their iodine value and fatty acid composition are quite similar. However the major difference lies in their triglyceride composition;
olein B contains more PLO & POO but much less PPP which is much responsible for the cloudiness of the olein. As a result the cloud point of olein B is 2,4°C lower.
