Iodine value is a measure of a total number of unsaturated double bonds present in the oil.

Determination of IV involves the addition of an excess of halogen to the sample, reaction of the excess halogen with potassium iodide and titration of liberated iodine with standard sodium thiosulphate using starch solution as the indicator.Of the many procedures available the most widely used are the Wijs and Hanus methods.
